Beef Sauté
Tender beef sautéed with peppers, onions, garlic, and tomato. An easy everyday meal that pairs perfectly with rice, bulgur, or bread.
Servings: 4

Ingredients:
- 2 lb beef, bite size
- 3 tbsp avocado oil
- 1 onion, whole
- 1 green bell pepper, diced
- 1 red bell pepper, diced
- 2 garlic cloves, minced
- 6 tbsp tomato sauce
- 1 cup hot water
- Salt, to taste
Method:
Start Cooking- Heat oil in a pot over medium-high heat. Add beef and cook until it releases its juices. Add the whole onion and let it simmer with the beef to release its flavor. Remove and discard the onion before adding the peppers.
- Cover, lower heat, and simmer until the liquid evaporates and the meat begins to soften.
- Stir in peppers and cook until softened. Add garlic and cook for 30 seconds. Stir in tomato sauce and cook for 1 minute. Add hot water and salt. Cover and simmer until the beef is tender and the sauce is glossy. Bon appétit.

- Cut beef into small 1-inch cubes – smaller pieces soften better with this cooking method.
- Let the meat release its own juices first. That slow simmer is what builds flavor.
- Add garlic after vegetables soften so it doesn’t burn.
- Start with ½ cup hot water and add more only if needed – beef saute should be saucy, not soupy.
- A mix of tomato paste + tomato sauce gives deeper flavor, but sauce alone works just fine.
- Add sliced mushrooms for extra texture.
- Stir in a pinch of paprika or red pepper flakes for gentle heat.
- Finish with chopped parsley if you like a fresh touch.
- Swap bell peppers for cubanelle peppers if available.
- For a richer sauce, add 1 tablespoon butter at the very end.
- Serve with butter rice or bulgur pilaf.
- Enjoy with a crusty bread.
- Side with a plain yogurt.
- Enjoy with shepherd salad.
