Coffee Pudding

Ingredients:
- 1½ cups milk
- ½ cup strong brewed coffee or espresso
- 2 ½ tbsp cornstarch
- ¼ cup sugar
- 1 tbsp salted butter, add a pinch of salt if using unsalted butter
- ½ tsp vanilla powder, or 1 tsp vanilla extract
Method:
Start Cooking- Whisk the base:: In a saucepan, whisk cornstarch, sugar, and salt with a splash of cold milk until smooth.
- Add liquids: Whisk in the remaining milk and the brewed coffee.
- Cook: Place over medium heat and cook, whisking constantly to prevent sticking.
- Thicken: After 4–6 minutes, the mixture will suddenly thicken. Continue whisking until glossy and it coats the back of a spoon.
- Finish: Remove from heat. Stir in butter and vanilla until smooth and fully incorporated.
- Chill: Pour into serving cups. Cover the surface to prevent a skin from forming. Refrigerate for at least 1 hour, until set.
- Serve: Sprinkle with chocolate shavings before serving. Bon appétit.

Notes:
- Use strong brewed coffee or espresso for the best flavor. Weak coffee will make the pudding taste flat.
- You can use instant coffee if you don’t have brewed coffee or espresso.
Dissolve 1–2 tsp instant coffee in ½ cup hot water. For a stronger coffee flavor, increase to 2½ tsp.
- Add ½ tsp cinnamon for a warm spice flavor.
- Stir in 1–2 tbsp cocoa powder with the dry ingredients for a mocha version.
- Replace coconut topping with toasted hazelnuts, almonds, or pistachios.
- Serve with whipped cream or chocolate shavings for a richer dessert.
- For a lighter sweetness, reduce sugar slightly and top with fresh berries.
- Adjust the strength of the pudding by changing the milk-to-coffee ratio. More milk makes it milder, while more coffee gives a stronger flavor.
- Serve this pudding well chilled as a simple dessert or afternoon treat.
- For presentation, pour into small glasses and top with coconut, cocoa powder, chocolate shavings, toasted hazelnuts or almonds, or whipped cream.
