Notes:
- Cooking time can vary depending on the type of rice used. Check the instructions on the rice package and adjust the cooking time if needed.
- For deeper flavor, cook the rice with chicken, beef, or vegetable broth instead of water.
- Toast the vermicelli slowly to avoid burning. It should be deep golden, not dark brown.
- Letting the rice rest with a towel helps absorb excess steam and keeps the grains fluffy.
- Add toasted pine nuts or almonds before serving.
- Stir in fresh parsley or dill for a fresh finish.
- Serve vermicelli rice alongside grilled meatball, chicken, stews, roasted vegetables, or yogurt-based dishes.
- It also works well as a base for bowls, lentils, and beans.
- Enjoy on its own or with a side of garlic yogurt.

Vermicelli rice
WHY WE LOVE IT
Toasted vermicelli adds a light nutty flavor and golden color, creating a dish that feels like pasta and rice in one. It looks elegant yet warm and comforting.
A LITTLE STORY
Cooking rice with toasted noodles is a classic technique across Turkish, Middle Eastern, and Mediterranean kitchens.
DID YOU KNOW?
The word vermicelli comes from the Italian word meaning “little worms,” referring to the thin pasta shape. While Mediterranean vermicelli is made from wheat, other regions of the world also use rice or bean-based noodles with the same name.
