Beef Wrap

Ingredients:
- 1 lb. beef strips, sirloin or stir-fry beef
- 2 tbsp avocado oil
- 4 wraps
- 6 slices Havarti cheese, or about 1½ cups shredded cheese
- 1 red onion, small, thinly sliced
- 2 cups spinach–arugula mix
- 2 tomatoes, thinly sliced into half-moons
- 4 tbsp mayonnaise, or preferred sauce
- Salt, to taste
Method:
Start Cooking- Heat avocado oil in a large sauté pan over medium-high heat.
- Add the beef strips and cook for several minutes, stirring occasionally, until lightly browned.
- Reduce the heat to low and cover the pan. Cook until the beef becomes tender and most of the liquid evaporates.
- Once the liquid is gone, season with salt and stir well.
- Place the cheese over the beef, cover again, and let it melt.
- Warm the wraps. Spread mayonnaise or your preferred sauce on each wrap.
- Add the cheesy beef mixture, greens, sliced onion, and tomato slices.
- Fold the wraps. Press in a panini grill if preferred. Serve warm. Bon appétit.

Notes:
- Wraps, tortillas, lavash, or soft flatbreads all hold the filling well and make assembly quick.
- Use mozzarella, cheddar, provolone, or Swiss instead of Havarti.
- Add pickles, roasted peppers, or avocado.
- Swap mayonnaise for your favorite sauce.
- Use any preferred greens.
- Serve these wraps with simple sides such as: shepherd salad, roasted potatoes or fries, ranch sauce or garlic yogurt sauce.
