Cheese Broccoli Bake
An easy oven dish made with broccoli, eggs, and melted cheeses. Perfect for a light meal, a quick side, or easy meal prep.

Ingredients:
Vegetables
- 1 lb broccoli florets, about 4–5 cups
Egg Mixture
- 5 eggs
- 3 tbsp milk
- 1 tbsp olive oil
- 3 garlic cloves, minced
- ½ tsp paprika
- Salt, to taste
- Black pepper, freshly ground
Cheese mixture
- ½ cup mozzarella, shredded
- ½ cup parmesan, grated
Cheese topping
- ½ cup shredded mozzarella
- ½ cup shredded cheddar
Method:
Start Cooking- Preheat oven to 350°F (180°C). Lightly brush your baking dish with olive oil.
- Steam broccoli for 10 minutes, until tender but not mushy. Drain very well and spread evenly in the dish.
- In a bowl, whisk together: eggs, milk, olive oil, garlic, paprika, salt, black pepper.
- Stir in ½ cup mozzarella + ½ cup parmesan.
- Pour mixture over broccoli.
- Top with remaining mozzarella + cheddar.
- Bake uncovered for 25–30 minutes, until set in the center and lightly golden.
- Rest 5 minutes before slicing. Bon appétit.
Notes:
From the kitchen
- Steam the broccoli just until tender (not soft) and drain it well.
- If you prefer a firmer bake, you can add 1 tablespoon flour to the egg mixture.
- Swap cheddar for gouda, gruyère, or fontina on top.
- Add chopped spinach, scallions, or roasted red peppers to the mixture.
- Use cream or half-and-half instead of milk for a richer texture.
- Sprinkle chili flakes or add Dijon mustard for a subtle kick.
- Turn it into a fuller meal by adding cooked chicken or turkey.
- Serve warm with a fresh green salad or crusty bread.
- It’s great for a light lunch, or alongside grilled meats or fish.
- Leftovers reheat beautifully and make easy grab-and-go meal prep for busy days.
