Ingredients:

Vegetables
  • 1 lb broccoli florets, about 4–5 cups
Egg Mixture
  • 5 eggs
  • 3 tbsp milk
  • 1 tbsp olive oil
  • 3 garlic cloves, minced
  • ½ tsp paprika
  • Salt, to taste
  • Black pepper, freshly ground
Cheese mixture
  • ½ cup mozzarella, shredded
  • ½ cup parmesan, grated
Cheese topping
  • ½ cup shredded mozzarella
  • ½ cup shredded cheddar

Method:

Start Cooking
  • Preheat oven to 350°F (180°C). Lightly brush your baking dish with olive oil.
  • Steam broccoli for 10 minutes, until tender but not mushy. Drain very well and spread evenly in the dish.
  • In a bowl, whisk together: eggs, milk, olive oil, garlic, paprika, salt, black pepper.
  • Stir in ½ cup mozzarella + ½ cup parmesan.
  • Pour mixture over broccoli.
  • Top with remaining mozzarella + cheddar.
  • Bake uncovered for 25–30 minutes, until set in the center and lightly golden.
  • Rest 5 minutes before slicing. Bon appétit.

Notes:

From the kitchen
  • Steam the broccoli just until tender (not soft) and drain it well.
  • If you prefer a firmer bake, you can add 1 tablespoon flour to the egg mixture.
 
Make it yours
  • Swap cheddar for gouda, gruyère, or fontina on top.
  • Add chopped spinach, scallions, or roasted red peppers to the mixture.
  • Use cream or half-and-half instead of milk for a richer texture.
  • Sprinkle chili flakes or add Dijon mustard for a subtle kick.
  • Turn it into a fuller meal by adding cooked chicken or turkey.

  • Serve warm with a fresh green salad or crusty bread.
  • It’s great for a light lunch, or alongside grilled meats or fish.
