Kitchen Tools:
- Baking sheet lined with parchment
Notes:
From the kitchen
- Boiling the potatoes for a few minutes softens the exterior and helps the edges crisp in the oven.
- After draining, let the steam escape so the potatoes roast instead of steam.
- Arrange potatoes in a single layer with space between pieces for proper browning.
- Flipping halfway through baking helps both sides become golden.
- Herb version: Add dried oregano, thyme, or rosemary before baking.
- Spicy: Add chili flakes or cayenne pepper.
- Cheesy finish: Sprinkle grated parmesan over the potatoes during the last 5 minutes of baking.
- Extra garlic: Toss with a little fresh minced garlic after baking.
- Serve these crispy potatoes alongside grilled meatballs, spiced chicken thighs, burgers, with ranch sauce for dipping.
- They are delicious on their own or perfect for sharing at the table.
