Golden crispy oven-baked potato wedges served in a white dish with a small bowl of creamy sauce.

Ingredients:

  • 6 small potatoes
  • 2 tbsp olive oil
  • 1 tbsp almond flour
  • ½ tsp paprika
  • ½ tsp garlic powder
  • Salt, to taste

Method:

Start Cooking
  • Preheat oven to 425°F (220°C). Line a baking tray with parchment paper.
  • Cut potatoes into apple-style wedges.
  • Bring a pot of water to a boil. Add potatoes and boil 5–6 minutes. They should be slightly tender but not fully cooked.
  • Drain well and let the steam evaporate for about 1 minute.
  • In a bowl, toss potatoes with olive oil, almond flour, paprika, garlic powder, and salt until evenly coated.
  • Arrange potatoes in a single layer on the baking tray. Do not overlap.
  • Bake 30–40 minutes, turning once halfway, until golden and crispy. Bon appétit.

Notes:

From the kitchen
  • Boiling the potatoes for a few minutes softens the exterior and helps the edges crisp in the oven.
  • After draining, let the steam escape so the potatoes roast instead of steam.
  • Arrange potatoes in a single layer with space between pieces for proper browning.
  • Flipping halfway through baking helps both sides become golden.
 
Make it yours
  • Herb version: Add dried oregano, thyme, or rosemary before baking.
  • Spicy: Add chili flakes or cayenne pepper.
  • Cheesy finish: Sprinkle grated parmesan over the potatoes during the last 5 minutes of baking.
  • Extra garlic: Toss with a little fresh minced garlic after baking.
