Mediterranean Potato Salad

Ingredients:
- 6 Yukon Gold potatoes, peeled and cut into medium cubes
- 4 lettuce leaves, thinly sliced
- 2 Roma tomatoes, diced
- 2 mini cucumbers, diced
- 3 scallions, sliced
- 1 red onion, small, diced
- 2 garlic cloves, minced
- 3 tbsp olive oil
- 1/2 lemon, juiced
- 1 tsp dried mint
- ¼ tsp black pepper
- ¼ tsp crushed red pepper
- Salt, to taste
Method:
Start Cooking- Place the potatoes in a steamer basket and steam until fork-tender, about 18 – 20 minutes. They should be soft but still hold their shape, not mash-soft.
- Let the potatoes cool for about 10 minutes.
- Transfer to a large bowl and add all vegetables, olive oil, lemon juice, and spices.
- Gently toss until everything is evenly coated. Taste and adjust salt or lemon as needed. Bon appétit.

Notes:
- The potatoes should be tender but firm enough to keep their shape when mixed.
