Mediterranean potato salad with steamed Yukon Gold potatoes, tomatoes, cucumbers, red onion, and herbs in a white bowl.

Ingredients:

  • 6 Yukon Gold potatoes, peeled and cut into medium cubes
  • 4 lettuce leaves, thinly sliced
  • 2 Roma tomatoes, diced
  • 2 mini cucumbers, diced
  • 3 scallions, sliced
  • 1 red onion, small, diced
  • 2 garlic cloves, minced
  • 3 tbsp olive oil
  • 1/2 lemon, juiced
  • 1 tsp dried mint
  • ¼ tsp black pepper
  • ¼ tsp crushed red pepper
  • Salt, to taste

Method:

Start Cooking
  • Place the potatoes in a steamer basket and steam until fork-tender, about 18 - 20 minutes. They should be soft but still hold their shape, not mash-soft.
  • Let the potatoes cool for about 10 minutes.
  • Transfer to a large bowl and add all vegetables, olive oil, lemon juice, and spices.
  • Gently toss until everything is evenly coated. Taste and adjust salt or lemon as needed. Bon appétit.

Notes:

  • The potatoes should be tender but firm enough to keep their shape when mixed.
  • This salad is forgiving. Feel free to adjust the vegetables and spices to taste.
  • Letting the potatoes cool slightly before mixing helps them absorb flavor without breaking apart.
  • If you don’t have a steamer basket, you can boil the potatoes instead. Place them in cold, salted water, bring to a gentle boil, and cook until fork-tender.
