Banana Bread

Ingredients:

  • 4 bananas, very ripe, mashed
  • 2 eggs
  • 1 cup cane sugar
  • ½ cup avocado oil
  • 1 tsp vanilla extract
  • 2 cups flour, all-purpose
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 tsp ground cinnamon
  • ¾ cup walnuts, chopped, optional

Method:

Start Cooking
  • Preheat the oven to 350°F. Lightly grease two small loaf pans or line them with parchment paper.
  • In a large bowl, mash the bananas until mostly smooth.
  • Add the eggs, cane sugar, avocado oil, and vanilla. Whisk until well combined.
  • Add the flour, baking soda, salt, and cinnamon. Gently fold until just combined. Do not overmix.
  • Fold in the chopped walnuts, if using.
  • Divide the batter evenly between the two loaf pans.
  • Bake for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
  • Let the banana bread cool in the pans for about 10 minutes, then transfer to a wire rack to cool completely. Bon appétit!

Notes:

  • Use bananas that are heavily spotted or almost black for the best flavor and natural sweetness. The riper the bananas, the richer the bread.
 
Make it yours
  • Add chopped walnuts or pecans for crunch.
  • Fold in chocolate chips for a sweeter version.
  • Skip the nuts for a simple, soft loaf.
  • Add more cinnamon for extra warmth.
  • Sprinkle a little cane sugar over the top before baking for a lightly crisp finish.
