For 16 oz of pasta, use about 4 quarts of water and 1 tablespoon of salt to season the pasta from the inside out. Use a big pot and stir occasionally so the pasta doesn’t stick. After draining, add butter or sauce right away and toss.
You can use any pasta shape you love.
Cook just to al dente, or about 2 minutes longer if you prefer softer pasta.
A splash of pasta water helps the butter coat the noodles more smoothly.
Adjust the butter and oil ratio however you like. More butter for richness, more oil for a lighter feel.
Make it yours
Add garlic powder, black pepper, or chili flakes.
Toss in whatever you have in the fridge: peas, spinach, zucchini, mushrooms.
