In a large bowl, whisk together the lemon juice, olive oil, yogurt, garlic, pepper or tomato paste (if using), paprika, thyme, salt, and black pepper.
Add the chicken and toss until evenly coated. Cover and marinate for at least 30 minutes. For best flavor, refrigerate for 2 hours or up to overnight.
Thread the chicken onto skewers.
Stovetop
Heat a large skillet or grill pan over medium-high heat. Cook the skewers for 10–12 minutes, turning occasionally, until golden brown and the chicken reaches 165°F (74°C).
Grill
Grill over medium-high heat for 10–12 minutes, turning occasionally, until lightly charred and cooked through.
Oven
Arrange the skewers on a baking sheet lined with parchment paper. Bake at 425°F (220°C) for 18–22 minutes, or until the chicken reaches 165°F (74°C).
