Recipe by NAVA Kitchen
Two chili cheese dogs topped with beef-and-black-bean chili, melted cheddar, diced red onion, scallions, and jalapeño slices on a light ceramic plate.

Ingredients:

  • ½ lb. ground beef
  • 1 cup black beans, drained and rinsed
  • 1 tbsp olive oil
  • ½ yellow onion, medium, finely chopped
  • 2 Roma tomatoes, peeled and diced
  • 2 garlic cloves, minced
  • 1 tsp chili powder
  • 1 tsp paprika
  • ½ tsp ground cumin
  • ½ cup tomato sauce
  • Salt and black pepper, to taste
  • 6 beef hot dogs
  • 6 hot dog buns
  • 1 cup shredded cheddar cheese
Optional Toppings
  • Diced red onion
  • Sliced scallions
  • Sliced jalapeños

Method:

Start Cooking
  • Heat the olive oil in a large skillet over medium heat. Add the onion and cook for 2 to 3 minutes, until softened.
  • Add the diced Roma tomatoes and cook for 3 to 4 minutes, stirring occasionally, until softened.
  • Add the ground beef and cook, breaking it into small crumbles, until browned.
  • Stir in the garlic and cook for about 30 seconds, until fragrant.
  • Add the tomato sauce and black beans.
  • Season with chili powder, paprika, cumin, salt and black pepper.
  • Reduce the heat to low and simmer for 10 to 15 minutes, stirring occasionally, until the chili is thick and saucy.
  • Meanwhile, boil or grill the hot dogs until heated through.
Assemble
  • Warm or lightly toast the buns.
  • Spread the buns with your favorite mustard or mayo, if you like, then place a hot dog in each bun.
  • Spoon the chili over the hot dogs and top with shredded cheese.
  • Finish with your favorite toppings and serve warm. Bon appétit!

Notes:

From the kitchen
  • Keep the chili thick enough to sit on the hot dogs without running into the bun. If it looks a little loose, simmer it uncovered for a few extra minutes before serving.
  • Add the cheese while the chili is still hot so it softens and melts into the topping.
  • The chili can be made ahead and reheated gently before serving.

Make it yours
  • Turn up the heat with Cholula, red pepper flakes, sliced jalapeños, or a pinch of cayenne.
  • You can also swap the cheddar cheese for pepper Jack, sharp cheddar, or your favorite melting cheese.
