Ingredients:

  • 4 salmon fillets
  • 2 tbsp olive oil
  • 4 garlic cloves, pressed
  • 1 lemon, juiced
  • Salt, to taste
  • black pepper, freshly ground
Garlic Parmesan Topping
  • cup Parmesan cheese, finely grated
  • cup mozzarella, shredded
  • 1 tbsp fresh parsley, chopped
  • ½ tsp dried oregano, optional

Method:

Start Cooking
  • Preheat oven to 400°F (205°C).
  • In a large mixing bowl, combine the olive oil, garlic, lemon juice, salt, and black pepper.
  • Add the salmon fillets and gently toss with your hands until evenly coated on all sides.
  • Let marinate for 10 minutes, if time allows.
  • Arrange the salmon fillets skin-side down on the prepared baking sheet.
  • In a small bowl, combine the Parmesan, mozzarella, parsley, and oregano, if using.
  • Sprinkle the cheese mixture evenly over the tops of the salmon fillets, gently pressing it onto the surface.
  • Bake for 18–20 minutes, or until the salmon is flaky and cooked through.
  • For a more golden topping, broil for 1–2 minutes at the end, watching carefully.
  • Serve warm. Bon appétit.

Notes:

  • Freshly grated Parmesan melts more smoothly than pre-grated cheese and creates the best texture.
  • Broil for the last 1–2 minutes if you'd like a more golden topping, watching closely to prevent burning.
  • Leftover salmon can be refrigerated in an airtight container for up to 3 days. Reheat gently in the oven or microwave to keep it moist.

  • Use all Parmesan for a sharper, more savory cheese flavor.
  • Add ½ teaspoon smoked paprika or Italian seasoning.
  • Sprinkle with a little lemon zest before baking.
  • Swap the parsley for fresh basil or dill.
  • Add a pinch of red pepper flakes for a little heat.
