Flourless Blueberry Muffins

Ingredients:
- 1 cup creamy peanut butter
- 2 ripe bananas, mashed
- 2 eggs
- 1 cup blueberries
- 1 tsp baking soda
- 1 –2 tbsp honey or maple syrup
- 1 tsp vanilla extract
Method:
Start Cooking- Preheat oven to 350°F (175°C). Line or grease a muffin tin.
- Mash bananas until smooth.
- Add eggs and mix well until combined.
- Add peanut butter and baking soda. Mix until smooth and thick.
- Gently fold in blueberries.
- Divide batter evenly into muffin cups.
- Bake for about 20 minutes, until set with a few moist crumbs.
- Let cool before removing from the pan. Bon appétit.
