Ingredients:

  • 1 cup creamy peanut butter
  • 2 ripe bananas, mashed
  • 2 eggs
  • 1 cup blueberries
  • 1 tsp baking soda
Optional
  • 1 –2 tbsp honey or maple syrup
  • 1 tsp vanilla extract

Method:

Start Cooking
  • Preheat oven to 350°F (175°C). Line or grease a muffin tin.
  • Mash bananas until smooth.
  • Add eggs and mix well until combined.
  • Add peanut butter and baking soda. Mix until smooth and thick.
  • Gently fold in blueberries.
  • Divide batter evenly into muffin cups.
  • Bake for about 20 minutes, until set with a few moist crumbs.
  • Let cool before removing from the pan. Bon appétit.

Notes:

  • Use very ripe bananas for best sweetness and texture.
  • Do not overmix after adding blueberries to avoid breaking them.
  • These muffins are soft, let them cool fully to firm up.
