Prepare the crostini
- Preheat the oven to 425°F. In a small bowl, combine the olive oil and pressed garlic. Arrange the baguette slices on a baking sheet and brush with the garlic oil.

Assemble and serve
- Spoon the tomato mixture over the warm crostini and top with shaved Parmesan.
- Drizzle lightly with balsamic glaze and serve immediately. Bon appétit!
Kitchen Tools:
- Baking sheet lined with parchment
Notes:
From the kitchen
- Keep it crisp: Drain any excess liquid from the tomatoes before assembling so the crostini stay crisp.
- Let it rest: Give the tomato mixture 10–15 minutes before serving to let the flavors come together.
- Prefer warm tomatoes? Sauté the tomato mixture for 2–3 minutes for a softer, richer topping.
- Add some heat: Finish with red pepper flakes or thinly sliced fresh chili.
- Switch the cheese: Try crumbled feta or fresh mozzarella instead of Parmesan.
- Make it extra fresh: Add a little finely diced red onion or chopped parsley.
- Serve bruschetta as an easy appetizer, alongside a salad, or as part of an appetizer spread.
- Assemble just before serving so every bite stays crisp and fresh.
