Bruschetta with fresh tomatoes, basil, shaved Parmesan, and balsamic glaze on toasted garlic crostini.

Ingredients:

For the tomato topping
  • 3 Roma tomatoes, peeled and diced small
  • 2 tbsp fresh basil, thinly sliced
  • 1 tbsp extra-virgin olive oil
  • 1 garlic clove, small, pressed
  • Salt and freshly ground black pepper, to taste
For the crostini
  • 8 slices baguette, about ½-inch thick
  • 2 tbsp olive oil
  • 1 garlic clove, small, pressed
For serving
  • ¼ cup shaved Parmesan
  • 1 tbsp balsamic glaze

Method:

Start Cooking
Prepare the tomato topping
  • In a medium bowl, combine the tomatoes, basil, extra-virgin olive oil, and pressed garlic. Season with salt and black pepper. Gently toss and set aside while you prepare the bread.
Prepare the crostini
  • Preheat the oven to 425°F. In a small bowl, combine the olive oil and pressed garlic. Arrange the baguette slices on a baking sheet and brush with the garlic oil.
Toast the bread
  • Bake for 6–8 minutes, or until golden and crisp around the edges.
Assemble and serve
  • Spoon the tomato mixture over the warm crostini and top with shaved Parmesan.
  • Drizzle lightly with balsamic glaze and serve immediately. Bon appétit!

Notes:

From the kitchen
  • Keep it crisp: Drain any excess liquid from the tomatoes before assembling so the crostini stay crisp.
  • Let it rest: Give the tomato mixture 10–15 minutes before serving to let the flavors come together.
  • Prefer warm tomatoes? Sauté the tomato mixture for 2–3 minutes for a softer, richer topping.

Make it yours
  • Add some heat: Finish with red pepper flakes or thinly sliced fresh chili.
  • Switch the cheese: Try crumbled feta or fresh mozzarella instead of Parmesan.
  • Make it extra fresh: Add a little finely diced red onion or chopped parsley.

At the table
  • Serve bruschetta as an easy appetizer, alongside a salad, or as part of an appetizer spread.
  • Assemble just before serving so every bite stays crisp and fresh.
