Ingredients:

  • 5 potatoes, medium, boiled
  • 2 tbsp olive oil
  • 2 carrots, shredded
  • ½ onion, small, finely diced
  • 2 garlic cloves, pressed
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp paprika
  • 2 tbsp parsley

Method:

Start Cooking
Boil the potatoes
  • Peel and cut into chunks. Boil until fork-tender. Drain very well and let steam off excess moisture.
Cook the vegetables
  • Heat olive oil in a pan. Add onion and cook until soft.
  • Add shredded carrots and cook 3–5 minutes.
  • Add garlic and cook for 30 seconds.
Mash and combine
  • Mash the potatoes in a large bowl.
  • Add the cooked vegetables, salt, black pepper, paprika, and parsley.
  • Mix gently until everything is evenly combined.
Shape and serve
  • Let the mixture cool slightly. Take small portions and roll into balls or shape in your palm.
  • Serve warm or cold. Bon appétit.

Notes:

  • Drain the potatoes very well and let steam escape to avoid a wet mixture.
  • Cook the carrots and onion until softened to bring out their natural sweetness.
  • Add garlic at the end to keep its flavor balanced, not sharp.
  • Let the mixture cool slightly before shaping for easier handling.
 
Make it yours
  • Add a pinch of chili flakes for a little heat.
  • Swap parsley with dill or green onions for a different fresh note.
  • Add a spoon of breadcrumbs if you prefer a firmer texture.
  • Serve with lemon wedges on the side for optional brightness.
