Cheeseburger sliders with melted cheddar in a baking dish, topped with sesame seeds.

Ingredients:

  • 1 lb. ground beef
  • 1 tbsp olive oil
  • ½ onion, medium, finely diced
  • 2 garlic cloves, pressed
  • 1 tsp salt
  • 1 tsp paprika
  • ½ tsp black pepper
  • 1 tbsp mayo
  • 8 oz sharp cheddar, shredded, about 2 cups
  • 12 brioche slider rolls
Topping
  • 2 tbsp olive oil
  • Sesame seeds
Burger Sauce
  • ½ cup mayonnaise
  • 2 tbsp ketchup
  • 2 tbsp mustard
  • 2 tbsp pickles, finely minced
  • Salt

Method:

Start Cooking
Cook the beef
  • Heat olive oil in a skillet over medium heat.
  • Add onion and cook 3–4 minutes until softened.
  • Add ground beef and cook until browned.
  • Remove excess grease, then return to heat.
  • Add garlic, salt, paprika, and black pepper. Cook for 1–2 minutes.
  • Remove from heat and mix in mayo.
Prepare the sliders
  • Slice rolls in half and place the bottom half in a lightly greased baking dish.
  • Sprinkle half of the cheese over the bottom buns.
  • Spread beef mixture evenly.
  • Top with remaining cheese.
  • Place the top buns over the filling.
Bake and serve
  • Brush olive oil over the tops and sprinkle sesame seeds.
  • Bake at 350°F (175°C) for 15 minutes, until the cheese is melted and tops are lightly golden.
  • Slice and serve with burger sauce on the side.
Burger Sauce
  • Mix until smooth and chill until ready to serve.
  • Bon appétit.

Notes:

From the kitchen
  • Drain excess fat before seasoning for a cleaner texture.
  • Add garlic after browning to prevent burning.
 
Make it yours
  • Use up to 1¼–1½ lb. ground beef for a more generous filling.
  • Add extra cheese for a cheesier result.
  • Swap olive oil topping for melted butter + garlic powder.
  • Spread a thin layer of mayo on the buns for extra softness.
  • Use pepper jack or any cheese you like.
  • Add ketchup and mustard for a more classic cheeseburger flavor.
  • Add 2 teaspoons Worcestershire sauce to the beef after draining the fat for more burger-like flavor.
  • Use brioche, dinner rolls, or Hawaiian rolls.
  • Use slider buns or mini sandwich rolls for a different texture.
 
At the table
  • Serve straight from the tray with fries, pickles, and shredded lettuce tossed with lemon juice and olive oil.
  • These are best eaten warm while the cheese is fully melted.

A LITTLE STORY

The word slider is most often linked to small hamburgers served in American diners and fast-food spots in the early 20th century. Over time, sliders grew beyond their original fast-food identity and became a popular party and game-day favorite, loved for their soft buns, melty fillings, and pull-apart style.
