Creamy Feta Spinach Dip

Ingredients:
- 1 cup yogurt, plain
- ¾ cup feta cheese, crumbled
- 2 tbsp cream cheese
- 2 tbsp sour cream
- 1 garlic clove, pressed
- 3 cups fresh baby spinach, packed
- 1 tbsp fresh dill, chopped
- 2 tbsp olive oil, divided
- ½ tsp black pepper
- Optional: squeeze of fresh lemon juice
- Optional: pinch of red pepper flakes
Method:
Start Cooking- Heat 1 tbsp olive oil in a pan over medium heat. Add the spinach and sauté for 1–2 minutes, just until wilted. Let cool slightly, then squeeze very well to remove excess liquid and chop finely.
- Add the yogurt, ½ cup feta, cream cheese, and sour cream to a food processor. Blend until smooth and creamy.
- Transfer to a bowl. Fold in the spinach, remaining feta, garlic, dill, black pepper, remaining olive oil, lemon juice, and red pepper flakes if using.
- Adjust seasoning and salt if needed. Cover and chill for 20–30 minutes before serving.
- Serve with pita chips, toasted bread, crackers, cucumbers, or fresh vegetables. Bon appétit.

- For a thicker, creamier dip, strain the yogurt for 20–30 minutes using a cheesecloth or coffee filter before mixing.
- Squeezing the spinach very well is the key to a thick, creamy dip without excess moisture.
- Blend only the creamy base and fold in the remaining ingredients afterward for the best texture and fresher flavor.
- Use block feta in brine if possible. It creates a creamier, more flavorful dip than pre-crumbled feta.
- Chill the dip before serving to allow the flavors to fully develop.
- Add chopped parsley or mint for a fresher herb profile.
- Stir in chopped walnuts for texture and richness.
- Add extra red pepper flakes for more heat.
- Swap dill for fresh chives or green onion.
- For a smoother dip, blend everything together instead of folding ingredients in at the end.
- Serve with warm pita, crackers, toasted sourdough, cucumbers, carrots, or colorful vegetables as part of a mezze spread.
- It also works beautifully as a sandwich spread or alongside grilled meats and roasted vegetables.
