Ingredients:

  • 7 oz feta cheese
  • ½ cup parsley, finely chopped
  • Spring roll wrappers, about 14 or as needed
  • Water, for sealing the edges
  • 2 –3 cups neutral oil, for frying

Method:

Start Cooking
Filling
  • Place feta in a bowl and mash with a fork until crumbly.
  • Add parsley and mix until combined.
Rolling
  • Place one wrapper in a diamond shape.
  • Add about 2–3 tbsp filling near the bottom and shape into a small log.
  • Fold the bottom corner over the filling, fold in the sides, and roll tightly.
  • Seal the edge with water.
Frying
  • Heat 2–3 cups oil over medium heat.
  • Fry rolls seam-side down in batches for 4-6 minutes, turning occasionally, until golden and crisp.
  • Transfer to a paper towel-lined plate.
  • Serve warm. Bon appétit.

Notes:

  • Spring roll wrappers can be found in the refrigerated or frozen section of most grocery stores, often labeled as spring roll pastry (or similar thin pastry sheets).
  • Roll snugly with no gaps to prevent oil from entering and to keep the cheese from leaking while frying.
  • For the best texture, frying is recommended for a crisp, golden exterior.
 
Make it yours
  • Add dill along with parsley.
  • Use a mix of feta and a milder cheese.
  • Add a pinch of black pepper or chili flakes.
  • Try fillings like minced meat, mashed potatoes, or spinach.
  • Bake instead of frying for a lighter version: Preheat oven to 400°F (200°C). Place rolls on a lined baking sheet and brush lightly with oil. Bake for 15–20 minutes, turning halfway, until golden.

  • Serve warm, on their own or alongside tomatoes, cucumber, and olives.
  • Perfect for breakfast, snacks, or tea time.
