Cucumber lime refresher drink with ice, lime slices, cucumber, and mint garnish in a clear glass.

Ingredients:

  • 1 lb. cucumber, chopped
  • cup lime juice
  • 3 tbsp sugar
  • tsp salt
  • 4 cups water
  • 6 fresh mint leaves

Method:

Start Cooking
  • Blend cucumber, lime juice, sugar, salt, mint leaves, and 1 cup water until smooth.
  • Pour through a fine mesh strainer into a pitcher, pressing to extract all liquid.
  • Add the remaining water and stir well. Taste and adjust sweetness if needed.
  • Serve cold over ice. Garnish with cucumber and lime slices. Bon appétit.

Notes:

From the kitchen
  • Use fresh, firm cucumbers for the best flavor and color. If the skin is thick or slightly bitter, peel it before blending.
  • Blend with a smaller amount of water first, then dilute after straining to keep the flavor bright and concentrated.
  • Strain well using a fine mesh and press gently to extract all the liquid without forcing too much pulp through.
  • Chill before serving for the most refreshing result.
 
Make it yours
  • Add a handful of fresh mint before blending for a cooling twist.
  • Replace sugar with honey or agave for a slightly different sweetness.
  • For a lighter version, reduce the sugar to 2 tbsp and adjust to taste.
  • Add sparkling water instead of part of the still water for a fizzy variation.
 
At the table
  • Serve ice cold in tall glasses with cucumber and lime slices.
  • Pairs well with grilled dishes, rice bowls, or light summer meals.
  • Also works as a refreshing afternoon drink on its own.
